Pho Saigon 8This is my go-to Pho place in the city. I’ve tried several others – and will probably continue to do so - but always come back to Pho Saigon 8. I should have realized this the first time that I visited it and immediately realized that it was packed and overflowing with Vietnamese people. There’s your sign. Pho, by the way, is pronounced “fuh” and can be the source of many a double entendre joke. And this was my first time trying Vietnamese food of any kind. Adventurous sort, I am!

I purchased the Pho (to go), and took it home. I had no idea what to expect because I had never eaten it before. Wow. Was I ever in for a treat.

The first thing that struck me was the incredible fragrance of the broth. After inhaling for several minutes, IInside of Pho Saigon 8id a pretty good job of putting together the meats and vegetables and pouring the hot broth over the mixture. I was in heaven. I’ve since had it at the restaurant, and realized while I didn’t prepare it quite according to Vietnamese tradition, my natural intuition wasn’t too far off. It tasted better in the restaurant (of course) because it was still steaming hot, with the vegetables and meats properly immersed in the liquid, and it was very fresh.

I now realize that this was the best Pho around. I haven’t seen the same kind of community support in any of the other Pho restaurants to date, and the Pho hasn’t been as fragrant or flavorful as Pho Saigon 8’s. And I haven’t even touched the incredible Spring Rolls. Yum.

Because I’m a food adventurer (Anthony Bourdain and Andrew Zimmern are my heroes) I went for the Pho with the tripe and tendon. There are other, less bizarre for the American palate, combinations. But for me, I wanted to experience the ultimate. And the ultimate did not clash with my palate. It did not disappoint.

Want to try something new and great? Get a nice bowl of hot steaming Pho at this place, and you won’t have to go anywhere else to try some. And a bowl of Pho in the summer is not “out there.” It is just plain good, no matter what the weather.
